These are so simple to make and taste delicious
Ingredients
Makes 12.
125g unsalted butter, melted and cooled slightly
2 large eggs
125 ml whole milk
225g plain flour
175g plus 1 tsp granulated sugar ( the additional 1 tsp of sugar is used to sprinkle over the muffins before baking)
2 tsp baking powder
1/2 tsp salt
300g fresh or frozen blueberries
Method
Preheat oven to 190C/ 170C Fan
Line two 6 cup cake tins with paper liners.
Whisk the melted butter, eggs and milk in a bowl. In another bowl combine all the dry ingredients; the flour, sugar (leave 1 tsp) , baking powder and salt .
Stir the wet ingredients into the dry ingredients; fold in the blueberries.
Divide the mix evenly among the muffin cases and sprinkle with the remaining 1 tsp sugar.
Bake until the muffins are golden brown and a skewer comes out clean, for about 25 to 30 minutes.
